I am a firm believer that every chocolate chip muffin needs a cute outfit:) That's why I was over the moon when I came across these cute tulip-shaped muffin paper cups in drogerie markt. They cost about 2 euros and you get 24 cups, which is a total bargain, and they come in different colors.
I've been admiring these cups in a local patisserie for ages; I've always wondered where they got these from- drogerie markt, of course. D-oh! I seriously believe that these muffin cups have special magical powers since they can make the most boring of muffins look like it's come our of a pastry shop!
Makes 24:
700 g/6 cups plain flour
4 tsp baking powder
½ tsp salt
180 g unrefined dark brown sugar (I used Billington’s Natural Molasses Sugar)
50 g caster sugar
4 eggs
600 ml/2 ½ cups milk
230 g butter
2 tsp vanilla essence
100 g semi-sweet chocolate chips
50 g cocoa powder
1 Preheat the oven to 200C/400F. Grease the muffin tins.
2 Sift the flour, baking powder and salt into a large mixing bowl.
3 Whisk together milk, vanilla essence and sugar, until frothy.
4 Place the eggs and butter in a separate bowl and whisk together well. Gently fold in the flour and milk mixture, until the consistency of the dough is lovely and smooth.
5 Gently stir in the chocolate chips.
6 Spoon the mixture into the muffin cups, filling them just below the top. Bake in the oven for 20-25 minutes, until well risen and browned.
