Apple Cake Recipe

3 whole eggs
300 g sugar
100 g butter
150 ml milk, any kind
250 g flour
½ tsp soda bicarbonate
1 tsp vanilla essence
1 grated lemon zest
1,5 kg sour apples
1.       Mix the eggs with sugar in one bowl, until the sugar is completely dissolved and eggs become frothy.
2.       Mix the oil, milk, flour with soda in another bowl until smooth.
3.       Cut the apples into slices, add the vanilla essence and lemon zest, you can dribble a bit of lemon juice on the apples to prevent them from turning brown.
4.       Carefully mix the egg mixture into the flour mixture. Do not beat too hard, otherwise the dough won't properly rise when baked.
5.       Grease the tart pan and pour the dough into it. Put the apple slices on top and decorate as you see fit.
6.       Bake 30 minutes at 180 C.
