Teja's Quick n' Easy Chocolate Chip Cookies

These are really easy and fun to make. I made them yesterday and they were gone in one afternoon:)

To make 24 you'll need:

115g / 1/2 cup butter or margarine at room temperature
45 g / 1/4 cup caster sugar
100 g / 1/2 cup dark brown sugar
2 eggs
1/2 tsp vanilla essence
175 g / 1 1/2 cups plain flour
1/2 tsp bicarbonate of soda
1 tablespoon of cocoa powder
150 g / 1 cup chocolate chips
1/4 tsp salt

1 Preheat the oven to 180 C/350 F. With an electric mixer, cream the butter or margarine and both the sugars together until light and fluffy.

2 In another bowl, mix the eggs and vanilla essence, then gradually beat into the butter mixture. Sift over the flour, bicarbonate of soda, cocoa powder and salt and stir. Add the chocolate chips, and mix to combine well.

3 Place heaped teaspoonfuls of the dough 5 cm/2 in apart on the baking sheets. Bake in the oven until lightly colored, about 10-15 minutes. Transfer to wire rack to cool.

Bon apetit, everyone!

Love, Teja xoxox
